Is their any way to change the text (sent from my Verizon wireless phone) when sending email from phone?

Yes, of course. It would suck if you couldn't.

When you have MAIL open, click the MENU button. Click the "* * *" and then pick SETTINGS. Select GENERAL SETTINGS and there you go.
