What is that "M" for when you hit the menu button while viewing a website?

It comes with a few other gestures already set up and you can define others. Look for the gestures areas in the app settings.

I added these:

h = home page
B = Dolphin bookmarks page
R = refresh current page.

To execute a gesture, press and hold anywhere on the active page and a little menu comes up under your finger. Move your finger to where it says "gesture" and it turns the current page into a gesture sensitive area. You then execute the gesture by tracing it with your finger. The app shows the track of the gesture in yellow and when you are done, executes the associated command. No more drilling through menus.
