Question about rooting

So what is different about your phone when you root it.

It grants you permission to do anything with the phone. I'm considering doing it to get rid of some of the factory apps that I don't use.

Someone suggested this:

Your electrical, heating, and plumbing is all accessed by going into a locked basement. Someone gives you the key and you now have access to each.

I would love to get rid of the nonsense apps on the incredible but just don't know yet if its worth possibly pricking my phone and my luck I would do it.
