Lord! I don't even have half those apps you listed lol

I have about 10-15 Market apps and that's it lol but here is what I would suggest to you:

AndChat (free IRC client if you do IRC)
PhoneMyPC ($10 but seriously just check it out)
PicSay Pro (couple dollars but awesome!)
ClockworkMod Launcher (couple dollars but awesome Launcher2 for the new 2.1 update!)

And ONLY if you're rooted (I am in no way trying to make this a root thread):
SETCPU
Root Explorer
MetaMorph

Those are the only apps I would suggest. They're my favorites!
 
Well, I really wish I would've rooted my phone and got into this type of thing w/ it before the 2.1 OTA came around. Until 2.1 gets rooted, *shrug*

I'll def. look at the apps you mentioned.
 
Wow lots of apps, some I suggest is Free-Ringdroid- edit your mp3 to make custom ringtones=awesome. $4.99 HomerunBattle3d=addicting. Free-VirtualWalkieTalkie, its pretty cool if you know other people with Android phones.
 
Virtual Walkie Talkie is hilarious, I like that one. I've seen several people talk about this homerun game... I might check it out.
 
You could get rid of the percent calc and tipper and just use the google voice search button and say "15% of 125" and get a quick answer.
 
Nothing really impressed me except the bubble leveller, I didn't know about it and actually think I'd use it.

Looks like you have quite a bit of overlap. For example, why would you need both "Drudge" and "Useless Facts"? :)
 
i've got rid of about a third of this apps, they were useless to me.

advanced task killer, slacker radio and 3 cubed music player.
 
no one yet to mention screebl? for ones who dont know what it is just check it out - deff worth having.

also, personal assistant (theres a free version)
meebo IM
Y5 battery saver(switches from 3G to wifi when in range)
handcent(lots more customization than stock messenger)
astro(file manager)
astrid(tasks)
sportstap
wavesecure(if you lose ur droid)
 
Peak Memory Usage app

With all of the apps the OP listed, I would highly recommend checking out Peak Memory Usage witch is a great free app.
(There's also a paid version of the app that provides a widget and removes the ads)

It's a great tool which lists all of your running processes and allows you to kill processes. It's like a lot of other task-killer apps in that respect...

However, where this app shines is that it provides you with recommendations about what processes you should kill and/or leave running! :)

I started using Home++ and it has a task killer that does what I need it to, cool feature with the other though. The Drudge comment cracked me up by the way. I can admit that all of these apps aren't "have to have", as another poster commented, he removed 1/3 of them. But that's what makes this phone unique in my opinion. Nothing like breaking the droid out and showing off all the apps I have on my phone... and I got them at no cost. Except the $30 / month fee to verizon of course lol.

I really enjoy everything on my phone so, that being said, keep the replies coming. Soon we'll have compiled a nice list of apps for someone to check out one day.
