How to control keyboard entry, and mode????

Hellppp...I was just wondering how you cut/paste text from a virtual keyboard when I did something that's changed the keyboard into a mysterious entry mode. I can't enter text, or press the send button in gmail.

Did you try going into settings and select input method and select the keyboard you want?

I think I was in Moto Chinese mode or something, though heavens knows how.
Thanks for help. Would still like a quick guide for getting around on the keyboard. For instance, on a web form, I'd like to hide the kybord to look at questions. Is there a way to toggle on/off?
