how do you remove a custom ROM?

im still fairly new to using ROM's and i was just wondering is there a way to remove the ROM and go back to the stock stuff? ive heard about the OTA update for droid 2.1 coming sometime and i just want to be ready for when it does come out

From what I understand, but I could be wrong...

If you made a backup when you rooted you can go back to that. Or when the 2.1 updates go out you can either accept it and it will unroot and install, or decline it and stay rooted.

would using the "simple nandroid restore (latest)" option in the recovery menu do it?

Check out the videos from the link above, I rooted my phone last night by watching the videos, quite helpful and you can do each step while they do it on the video as well.
