How do you freeze bloatware and hide undesirable apps with ICS?

Like the NFL app. All I can do is uninstall the updates

Uninstall the updates, then you'll have the option to disable the app.

When you disable an app it disappears from the app screen. How do you un-disable an app to get it back in the app screen?

disabled apps appear at the bottom of the list on your menu>>>manage apps>>>all tab

find the specific app you to remove from hidden apps and press it and then hit "enable" when it opens

Anyone know why you cannot disable/remove YouTube, play books, or play movies and TV even though it appears as if you are able to do so. After you delete them and reboot they automatically come back??? What a pain!
