when my droid is completely unrooted?

i went into recovery just to double-check and still came upon the apply sdcard:update.zip.. yet, it does not appear in my sdroot or when i pull up astro file manager.

what's the deal?

There will always be: apply sdcard:update.zip, otherwise you'd have no way of updating the recovery software.

If your superuser app is gone, then you're likely unrooted.
 
Open terminal emulator and type su. If access denied you're not rooted. Sometimes the SU app will still be there after unrooting, but if su doesn't work in terminal then you're not rooted. Somewhere there was a thread on what to do if the SU app was there but not rooted if you have this problem. But like kwmayo said, if no SU app your not rooted for sure.
