Can you remove "stock" apps if you have an alternative?

Still learning the lingo so forgive me. But if I have an alternative to dialer (like to use Rocket Dial), can I remove the stock dialer? Or "freeze" it?
There seems to be a hicup from time to time when when there are two apps that do the same thing. For example, dialer, contact, etc.

You can freeze/disable or remove stock apps. However if you want the native sync'ing to work, then you should leave them be. For instance if you removed(or froze) contacts.apk, then you'll no longer have the ability to sync your google contacts and would need another method for doing so. Just don't remove/freeze phone.apk, that will make you have a bad day.
 
Cool thanks, so basically if don't know what you are doing leave it alone.
What exactly does "freezing" do. Stay on your phone but not function?
