There's many ways; the easiest is probably with an application called "TubeDroid". Don't know if it still exists or is maintained, but Google it.

Freetube from the Marketplace will allow you to save videos on YouTube.

After update for you tube now says cannot play video unsupported format, what's the deal? Anyone have any ideas?

Try clearing the cache, and data then force close the app, reboot the phone and you should be good.
