Pinch to zoom text resize and notificaton shortcut

I find myself rarely using pinch to zoom due to text not resizing like it does on the double tap zoom. Is there any way to change this? Also, I don't like the notification bar across my screen top....is there anyway to place a homescreen shortcut to your notifications?
