email sync

I am a new droid user. I switched fron a blackberry curve and I couldn't be happier with the change, but I have a question about email.
on the BB i could decide whether the Handheld device would override my email server when syncing or vice versa. Is thee any way to do that with the Droid?

Not with the stock apps. Other email apps may provide different options. What type of email accounts do you have?
