I ran SU, enabled. Then ran bkapps -c

I get:

BusyBox v1.15.2 (2010-01-24 18:40:52 UTC) multi-call binary

Usage: grep [-HhrilLnqvsoeFEABC] PATTERN [FILE]...

Search for PATTERN in each FILE or standard input

(lists bunch of options)

All applications backed up! Use rstapps to restore :)

sooooo did it work? How do I verify? Or did it not work?

Your problem is busybox itself is not setup properly. What ROM are you running this from?

Shoot, sorry, missed one step - after the su command, type this:

sysrw

Then the busybox command - if that comes back with no errors you should be good to go
