Here are some of my favorites.

Gtasks. Task list that syncs with gmail and calendar.

Third party launchers are fun to mess around with. Go Launcher Ex, Adw Ex, and Launcher Pro are all nice

Astro file manager

Gmote for using your phone like a remote and mouse on your computer

K9 mail. Much better than HTC mail.

Fancy Widget Pro. Clock and weather widget with skins.

PicSay. Image editing.
