My Xbox finds my wifi tether signal just fine. Try changing your SSID.

Make sure you aren't putting the signal out as bluetooth instead of wifi. If that isn't the case, try changing the wireless frequency channel, and then turning off access-control.

(Dumb thought, but your PS3 does have a wifi adapter right? Idk, because Xbox 360's wifi adapters are bought separately).

    Changing your kernel won't help.

First off, you really shouldn't tether to game for a LOT of reasons, not the least of which is if Verizon throws a packet sniffer on your account for suspected TOS violations there's no way to hide the IP addresses it'll find and you'll be screwed.

Secondly, the PS3 won't recognize an Ad-Hoc signal, so it's pointless to try unless you have a PC with Connectify Me and Windows 7 or some other method to get an Infrastructure-mode-capable signal out of your Ad-Hoc signal.
