Ok cool. Did you make a backup right after you rooted?

If I go back to my back up do I have to set up my phone again. Set up email, set up home screens, down load apps again?

No, your backup is basically a screenshot of your system and your data. No need to wipe either :)
So, are you wanting to unroot or just go back to your stock ROM? Did you change your boot logo and/or animation?

Do you want to keep that? I believe there is a stock one in the toolbox if I'm not mistaken.
To go back to stock (rooted), boot into CW recovery, scroll down to Backup/Restore, select Advanced Restore, and select the backup you want to restore.

When I select the back up the next screen gives me these options restore boot, restore system, restore data, restore cache or restore sd-ext. What do I pick?

Sorry if these are dumb questions, but I have no idea what I am doing.

No such thing as a stupid question. Sorry, had family matters to attend to.
If you'd like, you can press your camera key and just go into Restore (Not advanced). You should see your backup there.
