Just unroot your phone and install the OTA (it will come up within a matter of minutes).

Verizon didn't change anything for the Droid 2.1 update. The Nexus One got a few different features, but that had nothing to do with Verizon. The 2.1 you have is just as Google intended for it to be.

They are the exact same thing. Verizon's 2.1 IS Google's 2.1.

It has to be customized in some ways as the pull down, market and various other areas all say "verizon" just makes you wonder what else they changed

I may be very wrong in my thinking but it seems that google would not release the code saying verizon all over... just thik of any other company that "oems" software

Correct me if I'm wrong but stuff like the "Verizon" in the pulldown menu can simply be acquired from Verizon's tower. Google just sets up the ROM to download that info correct?

What exactly are you looking for in a "stock rom"? The only truly stock rom is a source built rom, which still needs to be optimized for your phone. Since the manufacturer of the phone (motorola) is the one optimizing the rom for the droid, ESE81 is the most stock rom you're going to get. I posted a rooted & deodexed version if you want. Here is the link.. [Release] Stock 2.1 ESE81 & ESE81 Deodexed backups
