I am thinking of buying a Droid. Can I sync or upload data from Palm desktop to a Droid so I have all my contacts and calendar on the new phone?

you have to back it up from Palm and import to the droid. I did that on a coworker's machine.

also works on our Exchange servers. We backed the Palm up and imported to Outlook. Then when we set up the Excahnge account int he android, it updates.

You can't sync but, as stated above, you can export and then import. Are you planning on using a Google account or some other type of account as your primary?
