On a few separate occasions I have had my battery percentage drop 20-30 percent for no reason. Last night I went from 60 to 40 after a few minutes and then today it dropped from 80 to 50 in seconds.

I'm running Chevy's 1.0GHz LV kernel but I haven't had good battery life with any kernel that I've tried on CM 7.03

Your battery stats are begging to be wiped, there are numerous threads out here already.

I wiped the battery stats after a full charge.

I also recently discovered a new problem. In SetCPU, I have decreasing CPU speeds for decreasing battery levels, but under the %in state stats, they don't correspond to what should be happening. Why wouldn't the profiles be working?

What do you do after you wipe the battery stats, do you ever restart your phone?

Also, when you let your phone charge during the battery stats rebuilding, do you use it at all? because thats a nono!

    Thanks for the quick reply.
Looks like I'll be redoing this process

It's been awhile and this problem keeps on occurring.
I'm not sure if my battery is failing, the kernel is at fault, or just what the hell is going on.
I was charging the phone this morning while Pandora was playing and the battery level dropped from 100% to 70% in a matter of minutes. After unplugging it and using it, the level fell from 50% to 20% instantly.
While charging it back, I noticed it jumped from 40% charged to 60% and it does that frequently.

I've wiped the battery stats numerous times and nothing seems to work...anyone else had a related problem?

You didn't calibrate correctly it appears. Charge full(4200mv or so) then use battery calibration(app from market). Open the app up click the button and then let it die. Charge it FULL WITH MINIMAL USAGE(less usage the better so try to do it overnight or something) and when its fully charged(reading about 4200 again) you're good to go. If it still continues then your battery is probably dead.
