How long approximately does it take to "Install Update..."?

If it appears to freeze for more than 5 minutes (except for the boot animation), then you're probably stuck and may have a bad .zip file. I'd suggest restoring a nandroid backup, redownloading, and then trying again.

The boot animation, however, is sometimes a 10-minute process after flashing a new ROM, theme, or anything else that is done via the bootstrap recovery.
