And I'm having a hard time deciding if I should stick with CyanogenMod 6, or go back to default, upgrade to Verizon's build of Froyo, and just root that.

    Opinions?

Stay rooted, there is literally no reason to go to the stock 2.2 build since CM6 (or any 2.2 based rom for that matter) will be able to do more than the stock 2.2 build.

Is CM6 more stable than the RC3 build? I've been having issues (massive slowdown for no real reason, LauncherPro crashing every other time I hit home) with it for a while now.

What advantage does Verizon's build have over the feature-rich, built from source, perpetually up-to-date CM6?

    None.

In my experience yes. I tried CM6 RC1 and uninstalled it after a day but so far CM6 has been very stable and quick.
