I am still confused about rooting, Why would I want to do it if it could void my warranty or possibly cause my phone to be a brick...I know what it means to have root access on a Unix box. I guess I ma just missing what the benefits are for my droid

This is an easy one. You'd want to....because you wanted to.

Why do some people want to bore out their car engine or upgrade their car stereo?

For that matter why do they change their wallpaper on their computer? Not everyone does.

You can learn some linux skills, or in your case apply yours. The chance of bricking the phone is just about non-existent. Yes it voids your warranty but I don't think that has caused any real issues for anyone either. It's a hobby. Not all hobbies are for everyone. For others they see they can fine tune things, make it better, so want/need to tweak it so it does.
