"Root all the things!" That is my motto. Why should you root your Moto 360. Well once rooted you will have full administrator privileges and who knows what kind of cool customization developments may come in the future for this device. The Root comes by way of a rooted boot image created by developer Jcase. It was made using a dumped image from a Moto 360. The rooted boot image appears install the su binary along with some other things to the system partition which means this will be a permanent root which won't go away until you physically remove it.
