If you are rooted start with SPRecovery or Rom Manager. Both will backup you current rom and settings. Next, you should consider MyBackup Pro or Titanium.

If your not rooted then get Astro.

You gmail and contacts in Gmail will be restored automatically.

Problem that I had with titanium when I restored my settings was that my phone did not respond correctly (especially my home button). As pain of a neck as it is to redo all your settings it is some time necessary especially if you are trying different roms or going from 2.1 to 2.2.

I use both. They are both good. think MyBackup has an easier UI but once you understand Titanium it is fine.
