So I attempted to root my droid to install the wifi tethering custom rom, but I gave up half way through the process because I got stuck on a step.

Anyway, I ended up successfully rooting my phone and installing droid-root-helper.apk. This is where the problem occurred.

Basically I got to the step in the droid-root-helper that backs up my restore image to something .old, and replaces it with a custom image.

I want to basically factory restore my droid to the default UNROOTED, unmodified image, but when I choose factory restore, I am applying the custom rom (I know this because after restore, there is a superuser app).

What do I need to do to restore my original image and start from scratch? Many thanks! This forum is incredibly useful!

You need to copy your original backup, if you created one before you started modifying the phone,to the sdcard/nandroid folder.

check around the alldroid forums (or here) and you'll find some stock, non-rooted images floating around in the form of backup files I believe

You may not have to install nandroid, depending on how you installed the custom image, you might be able to simply copy the stock image to the same place and do the restore.

I suggest installed nandroid it's important to have if you are hacking around with your phone, I'd also suggest getting familiar with ADB.

Sorry if this sounds dumb, but what exactly is ADB? Do I need drivers to run it under windows? Is there an easy ADB info thread out there?
