Is there a way to prevent the screen from locking everytime it goes dim?

Is there a custom dictionary or autotext that can prevent the phone from changing words?

Is there a way to hide widgets?

1. Not as far as I know
2. Settings ->Language & keyboard ->User dictionary - Also the device keyboard menu under language & keyboard will let you turn off the auto-text and auto replace

3. click and hold (long press) you can then drag the widget to the bottom of your screen (portrait). You'll notice the menu button turns into a trashcan. Move it there and it will remove it from the screen. Long press on the home screen and select widgets to add them.

not just remove the widgets from the home screen but actually hide the widgets all together

There is an app (I cant remember what its called) that after the screen goes dim you dont have to slide to unlock. Its .99 and worth every penny from what I hear.
