When the 360 is connected through Bluetooth does it interfere with my Bluetooth headset?

I think you can connect a Bluetooth headset to the watch and then play music on the watch and listen to it using a Bluetooth headset. I don't think the headset will do anything other than connect for music though.

Can't you use the watch to answer a call when using Bluetooth earpiece/headphones that are connected to the phone?

It has answer, ignore options on the screen for any call that comes in; whether connected to a Bluetooth headset or not.
