Question about IMAP & Email

If I set up my email in IMAP Protocol (yahoo email & for work godaddy server) and then I delete an email from y phone will it get deleted from the server?

What I want to be able to do is to delete an email from y phone but only have it deleted from the server if I choose to. How can I do that?

Yes.

You'd need to find an email app that offers the option. K9 and MailDroid are frequently recommended. I only really use an Exchange account so I can't really comment on these apps or any apps that have that specific feature.
