Handcent SMS to replace stock SMS is a good place to start :). Also if you need ringtones just go to the market and type in ringtones and a million apps will pop up. Also Spare Parts on the market and speed up all of the animations to "Fast" for a faster UI experience.

Search google for lists of must-have apps. There are a lot of lists out there with good apps to have. Also, download appaware and/or appbrain from the market. These will show you the most popular apps.
