is there an easier way to just switch between Helix and stock other than uninstalling Helix? Or am I just missing something really simple? I've been having some similar issues.

search the market for an app called "Home switcher"

Home Switcher is probably the easiest way but if you don't want another app you can do it yourself.

menu>settings>applications>manage applications>Helix>clear defaults
then next time you hit the home button it will ask you which launcher you want to use.

I rerooted and restored a backup of BBv1 I had along with ADW Launcher instead of Helix and everything is flawless AFAIK,
