Is there a way to stop the DroidX (and other pones) from defaulting to /M or mobile web page for sites like Google and Amazon. In other words, how do you turn it off?

Some browsers, like Dolphin and XScope, have an option in their settings to change the user agent to computer. Not sure about the default browser.

Stock does as well but it's not a persistent setting. You have to use the about:debug trick. That said, the custom ROM I'm using makes it so I don't have to use about:debug and the user agent setting is always available in the settings.
