Or a very simple update where I won't lose my apps (all free apps but still! I dont want to lose my settings and whatnot)

I just want to make sure I won't:

Break updates for all my apps.
Have to redownload all my applications again.

and I just want to make sure if I flash SuperDroidRom 0.1.1 and 0.1.2 comes out the next day I won't have to go through a lot of steps to make the transition smooth.

I apologize if I didn't explain my questions well enough but I hope you all can help

why not just use titanium backup and backup your data and apps and restore them after flashing your new ROM?

Your looking for DroidMod, they have an installable app that does all the hard work for you, and they just in the last version added the option to wipe data, but keep your apps. And updates occur like any other app, you get notified through the market that an update is available.

Just use the update.zip method with Ultimate Droid and you always keep your apps and settings.
