Is there an app for this?

    1. Is there an app to adjust touch sensitivity? Don't have the steadiest hands and my phone seems overly sensitive.

    2. Is there an app to have text messages display on screen (without having to drag from the notification area)? So it displays them like a regular phone, like a pop up window.

    #2 Handcent does just that.....

    As far as the sensitivity thing goes, the best thing for the OP is to learn to deal with it. I would suggest some other keyboard options, if that's a problem. Maybe a T9 replacement or something similar.
