I've got some .avi movies that I want to open with RockPlayer by default, but when I click on them in ASTRO they try to open with the stock video player...which doesn't play .avi files.

Have you tried setting RockPlayer as default player?
I don't have Astor and I haven't had an AVI file on my Droid since RockPlayer has been out, but I'll test it out as well...

Use rockplayer's file manager to navigate to wherever the videos are stored on your SD card.,

Yeah, looks like there's no way to get the RockPlayer to launch the AVI files thru a file explorer like Astro or RootExplorer, even if you make RockPlayer the system player....

RockPlayer plays the AVI file extremely well though...
