is it possible to remove the notification with USB debugging enabled? It drives me crazy when I plug my phone into my pc and i get a loud "DROOOIIIID"

I've looked around and it doesn't seem to be an option that i can just turn off..... and seeing as how you guys seem to be able to do pretty much anything with these roms i figured i would ask about it here

You can go into Settings->Applications->Development and uncheck USB debugging.

That'll turn it off for letting you know you can mount the SD card for use on the connected computer, but if you have USB debugging turned on, you'll still get a notification for that.

is USB Debugging something that I need to keep enabled? I remember that I had to turn it on for something, and now I don't remember what it was. I don't know how to use adb or any of that stuff, so I don't know if I could debug if something went wrong.

shouldn't need it unless you are planning to use adb or the sdk

but you don't need it on all the time. Only when you need to make backup or use a backup.
