How does the 50,75,100 MBs memory script work?

I've seen this in many roms. What does this actually do to the phone?

It temporarily adjusts/sets the internal os low memory killer, similar to what autokiller memory optimizer app does.

Someone else correct me if I'm wrong, but I believe it makes the OS keep the value you choose as the amount of available RAM at all times. So if you choose the 100MB option the OS will ensure that 100MB of RAM is always available. But it can also have a negative impact on your phone as the OS may kill apps you're currently using (or even your home app) in an attempt to constantly keep that much memory free.
