In gmail you just hit the options, select more at the bottom there is a select text. Just swype what you want copied from it.

Ever consider using only the Gmail app? I've been doing this for about 18 months now with my pop3 accounts and it works great: Using Gmail as your own personal push mail server

I use Exchange for personal and work accounts, and copy/paste is something Samsung determined wasn't important enough to include with the email app. Just one of the few annoying brain farts they give you with this POS. Wait until you receive a meeting invite and the date and time of the meeting is nowhere to be found on the message... good times :( It's not free, but a number of others have claimed using the Touchdown app is the way to go for Exchange accounts and not use the crappy email app (which you can't change the default, ugly CLeveland Browns color scheme).
