Do a full sbf? Will that also erase all traces of phone being rooted? Or can I go under Clockwork recovery and just do a restore under the backup before phone was flashed?

If you're returning it than do an SBF. If you just want a clean starting point then restore a stock rooted backup

So if I restore to a rooted backup, can I just uninstall z4root? Will that clear it up? Basically my co-worker wants it back to stock before root. Thanks for your help, greatly appreciated!

You would need to remove clockwork and Super User using either terminal emulator or Root Explorer before unrooting. Or you can buy the Team Black Hat and flash the monster 2.3.340 SBF in clockwork and it will wipe the phone. Otherwise just do a regular SBF to wipe it
