Hopefully you saved a copy of the backup on your computer, yes?
    If no, then ouch.

Hope you had a backup! On a side note, applications will create new folders on the sd card as they need them, so don't worry about it being "blank."

Another question would be... do you have wavesecure, lookout, or mobile defense installed etc? If you backed up to any one of those sites, you may be in luck. If no, then again... ouch

Yes, unfortunately if you formatted your SD card your info is gone without back up.

Let's face it, you've probably (definitely) lost all the files on your card forever without a backup, but that won't affect any future rom installs I don't think.
It seem like you should just be able to drag the nandroid (folder contents) from your PC over to your fresh SD card, then do a backup the next time you flash a new rom, as long as your phone is running fine. On the other hand, I could be completely wrong so take it with a grain of salt.

Let me add a caveat by saying I'm a nooby, but I will still offer my help.

I would say that is ok to do. But, you won't be able to recover any previous versions of your phone (without a backup) you'll just be backing up what you have installed now, so yes I would think that is safe and would work.
