In each one of the examples you gave there is a setting.

Yes, it's done in the settings of each area. For example in text messaging you would press menu button, go to settings, notifications, and select the notification you want to be set up for that app.

You can also use your own sounds/songs for ringtones and notifications.

Simply create folders on the root of your SD Card.

1. "Notifications" folder and place any file you want to use for text/e-mail etc notifications.
2. "Ringtones" folder and place any file you want to use for phone ringtone!
