I'm considering selling my iPod touch and getting a higher capacity micro SD card for my phone (16 or 32 gigs). Would filling that up with music affect my phone performance?

No?
Unless you have the phone using the sd card as the swap file? But...
No!

Yes. Some phones are prudes and all those naughty pictures you have on it are making it sluggish with rage! :D

Seriously, though, it depends on the phone's interface. Some phones can handle a class 4 or even class 6 card, and you're better off buying those if you want to increase performance. However, some phones don't handle larger SD cards very well. And it seems to vary on the individual phone, rather than model, on if size is going to impact it.

I don't know if the Pro can handle anything faster than a class 2, but for listening to music you're fine speed-wise with anything.
