If your willing to install a new rom you can use dmupdater and you will be given the option to remove most of the stock apps

In the bugless beast rom thread there are some updaters that will remove some of the preinstalled apps .... can't remember which other than the corp calendar.

    Use Terminal Emulator:

    cd /data/app
    su
    mv filename.apk filename.apk.bak

You can also delete them with rm, but then it's harder to get them back....

Very true. I'd rename first and if that worked then consider maybe deleting. It would suck to delete something then realize you sorta needed it for your phone to function. Then again, that's what sprecovery is for!

    su
    mount -o remount,rw -t yaffs2 /dev/block/mtdblock4 /system
    cd /system/app or cd /data/app
rm filename.apk - completely removes app
    mount -o ro,remount -t yaffs2 /dev/block/mtdblock4 /system
    sync
    reboot
