I'm new to rooting and have tried many different roms. Yet I cannot find one that suits my needs entirely. I was wondering if what i want below is possible.

    Base ROM: Ultimate Droid
Combine the "5th row" for apps like we have in the helix launcher.
Enable a favorites bar similar to what OpenHome has.
Have a RAM optimizer similar to what is seen in OpenHome.
    Apps2SD & a CPU Overclocker included.

I hate having more than 1 or 2 launchers, I want more space than 256mb on my phone, and i want the thing to run ridiculously fast. =) is that too much to ask for?

Im not sure what you mean my "5th row" for apps?
Helix Launcher has 4 icons slots at the bottom, that are hardwired in there. Also a screen preview and up to 7 screens.
Some roms allow you to use custom scripts and you are able to free up 50mb, 75mb, and even 100mb of ram. Also, you can remove launchers with the scripts.
Apps2sd is included in some roms too, cyanogen has it working :)
Cyanogen, and most roms now are set at 600mhz, but you can download setcpu to overclock to what you wish. Just need the kernel to allow it.

    Good luck

I meant the extra 4 icons with helix as the "5th row." Just wish you could choose what parts of something you wanted to install when you install the rom. Like I say on droid-life one video where he was in the boot menu selecting to install certain features of a rom, why not have that for every rom so users could select which they liked and have it custom to each users needs.

Every dev has their own methods.
Adamz has a lot of custom install options, maybe you want to check out his rom.....

Thats because thats a rom.tgz method used by SPRecovery. Cyanogen uses a different recovery, and installs update.zip's, which from rom manager CAN give you options IF the Dev's choose to include them. Most people do not use .rom.tgz's because they are very time-consuming and difficult to write the install scripts.
