Why would you want to?

If you have a tool like root explorer, you can. Under system/apps there are 2 files that make up the car dock app. Delete them and it's gone. Personally I did that and installed the old Android 2.1 car dock.

I never use it. Thanks for the info. I forgot what the 2.1 dock looks like

you should use titainum backup to uninstall system apps, root explorer dosent uninstall the app it just removes the apk (witch dose remove it form your app drawer) but the data is still left behind taking up space
