The 5x or 7x is how many frequency slots the kernel has. 5 is the normal stock number. To get 7 was a bit of a hack, and some people think it might be unstable and could possibly damage the hardware if done incorrectly. I've seen no evidence of that, but do your own research if you're worried.

The large number (600,800,1000,1100, etc) is the maximum frequency in Mhz

The LV, SV, IV stands for Low-Voltage, Standard-Voltage, or Increased-Voltage. Low-Voltage will improve battery life and lower the cpu temperature, but for some speeds may be too low to be stable. Increased voltage will improve stability for very high overclocks, but will decrease battery life and increase temperature.

Pick some combination of steps, max frequency, and voltage level and try it out. Grab a few of them and load them onto your SD card, and you can easily swap between them using ROM Manager or just Clockwork Recovery.

It's possible, you just need to do some work (grab the img, split the kernel zimage file out, put it into Koush's kernel update zip template). I've been running Bekit's 800mhz LV kernel for a few weeks now on a "stock" ESE81 rom.
