So... Changing ROMS doesn't delete my apps and contacts and other data stored on the phone? or does it?

It will remove your apps. But if you have them backed up its one click away from restoring. Anything on your sd-card such as, contacts, photos, stay intact

Backup all apps.
Wipe and then load new ROM.
Install Titanium Backup.
Restore apps.
Easy.
