aside from the obvious ability to install custom roms and update sooner...

    1. tethering (wireless and usb, regardless of your carrier's policy)
    2. access/backup/modify files in the android system (like removing the camera click for example)
    3. Overclock (which is not only safe if done correctly it is very effective)
    4. titanium backup.. you just have to use it to know
    5. have more fun with testing/updating/changing my phone in just about whatever way I want

Ugh.. Well, "Rooting" sounds too good to resist. I just hope I don't "break" my phone. BTW.. What's "Overclock"?

    Thx,

OC makes the processor run at a high frequency..i.e increases speed.. you can also underclock to save battery life. for example

    Stock OS runs at 550MHz
You can OC up to 1200 MHz (1.2Ghz)
You can also underclock all the way down to 125Mhz, which is good for when the screen is off and this helps maintain or even increase battery life

    check this: http://www.droidforums.net/forum/hacking-faqs/47871-overclocking-101-a.html

besides overclocking and tethering since those seem to be a commonality, here are my top ones

    1) MenuUnlock - seems minor, but I'm addicted to it
    2) Chrome-To-Phone - love that little thing, use it ALL the time... it won't require root, but will only be on Froyo, which I have early b/c of being rooted
    3) Customize images in the framework
    4) Wavesecure as a system app
