All it does is update your roaming capabilities. It's an automated process and no information is collected from your phone.
*SUGGESTION* Perhaps you could make all of these apps optional.. Like a separate file to download that contains these apks, and we could just choose...
Personally, I'd be happy to see all of those apps gone. It would be awesome if ads were off by default too.

You could do that or you could do this:

If you have clockwork, just flash another rom.
You could always fall back on ROM Manager and flash Clockwork. Doesn't matter, whatever is easiest for you, sarge.
Problem solved, re-root with Easy Root. Everything else will just fall into place.

Yup, if you got the buck use Easy Root. If not, DMUpdater might be good for you too.. Some say it's a little buggy though.
