If you have Froyo, permaroot still exists. If you have GB, and aren't S-OFF, there isn't even a temproot.
The backup you did in recovery is what you want. You want to restore the one you did right after you did the S-OFF. Hopefully Clockwork Recovery...

The closest you can get to stock is the current Froyo RUU floating around. It's kind of like the leak of GB before it was released OTA.
There is an RUU for stock unrooted Froyo floating around. The link to it is on XDA, and I have read of a user having success with it.
