Welcome to Droid Forums! Not exactly sure about your phone but it will help if you let us know what OS you are on now (Gingerbread, ICS) since it may be a built in feature.

my OS is Android 2.3.4 which I assume is the Gingerbread. Doesn't do it all the time but in researching I can't find how to intentually do it. The only way to escape from it is to put it asleep then re awaken

Update : I found an article on the net about the Android 2.3.4 Gingerbread OS screen shot feature. If you hold the power button and tap the home icon a screen shot image will be taken! So apparently my Otter Box case was pushing the power button enough to activate this feature. I knew it had to something simple lol. And something learned
